Apple Loaf with San Miguel Gluten Free Beer AD
60g ghee, softened
90g unrefined cane sugar, or jaggery
2 small eggs
125g unsweetened applesauce
175ml San Miguel Gluten Free Beer
2 tablespoons treacle
260g white spelt flour / gluten free flour blend
1 teaspoon ground ginger
1 teaspoon allspice
1 tablespoon baking powder
1/2 teaspoon sea salt
Cream cheese frosting
500 gram cream cheese, softened, chopped
150g brown sugar
3 teaspoon mixed spiced
candied ginger in syrup
Preheat the oven to 180 degrees C.
Grease and line a loaf tine with baking parchment
Mix the ghee and sugar together until creamed. beat in the eggs, apple sauce, beer and treacle. Mix well to combine
In a separate bowl, combine the flour, with the baking powder and salt.
Slowly add the dry to the wet mixture. Beat to combine.
Pour the batter into the lined loaf tin.
Bake for 60 minutes, until a skewer comes out clean
Allow the loaf to cool, turn out and leave to cool.
Beat the cream cheese mixture together, aside from the caramelised ginger, add some of the syrup to sweeten
Once the loaf is cool, frost the top of the loaf with the frosting and finish with chopped candied ginger pieces
